Paleo Chicken Kale Soup: Gluten and Dairy Free

The weather in the northwest has been a little… well… crazy!  A few days ago we had hot summer-like days filled with sun. Today it is stormy, cloudy and raining on and off.  This kind of weather makes me crave something warm and comforting, but still easy and healthy.  Since the birth of our second baby I am working hard to make sure we have healthy options for meals that are quick and simple.  This Chicken & Kale soup serves up a healthy yet hearty dish with absolutely no dairy or gluten.

My obsession with kale is becoming quite serious!  If I can put kale in it, I will make it!  This soup only takes a few ingredients which is great for your wallet!  It also lasts several days which is a huge bonus for us with two small kids in the house, not having to worry about food prep with lots of leftovers is a winner in our house!  My husband liked it so much that he requested this to be added to our ‘regular menu rotation’ – I love when that happens to a healthy dish I made!

Paleo Chicken and Kale Soup: Dairy and Gluten Free
Serves 8
Ingredients
  • 6-8 cups organic chicken broth
  • 1 head celery, chopped
  • 5-6 large organic carrots, chopped
  • 1 yellow onion, diced
  • 2 cloves of garlic (more if your family is a garlic loving family)
  • 1 head of organic kale (stems included), chopped
  • 2 large chicken breasts, cut into bite sized cubes
  • kosher sea salt & pepper to taste
Instructions
  1. Place all ingredients, except the kale in a large pot over medium heat and cook for about 10 mins. Add in cubed chicken and cook for another 30-35 minutes – until chicken is fully cooked.
  2. Then stir in your kale and serve hot!

Thats it!! How easy is that!! A one-pot meal that is super healthy, inexpensive, and has leftovers for your busy days ahead.  It really is comfort food at its healthiest!
