Pantry Pizza: Gluten Free with Kale Pesto!

“Kale Pesto? That sounds weird”! That’s what I thought at first.. I’m so glad we tried this recipe because it is so tasty, and healthy!!  Some people cringe at the thought of eating kale, but it really can taste great, and it’s good for you.  I just had to try it!

Gluten Free Kale Pesto Pizza for $10 or less homemade!

When I found this recipe for Kale Pesto I knew I wanted to make pizza!  But I didn’t want to go buy everything, I knew I wanted to keep it a $10 dinner or less. So I scoured my pantry for ingredients, pretended I knew what I was doing in ‘creating’ a recipe from scratch and voila: had a dinner for less than $10 and gluten free too boot!  I went to the store, got the GF pizza crust, Kale, and some cheese. That’s it, everything else was pantry ready. What I also love about this pesto is that the pecans and cashews are significantly less pricey than pine nuts that are in traditional pesto, total win!!

Pesto Ingredients:

  • 2  cups chopped  kale (or get a bag of pre-chopped kale from the grocery store. Trader Joe’s sells them for $1.99 – sweet)
  • 1⁄4 cup   pecans
  • 1⁄4  cup cashews
  • 3   tbsp olive oil
  • 1   clove garlic
  • 1⁄4   tsp  sea salt

This recipe makes 4 servings, we used 1 serving for our pizzas, if you are making a larger pizza you may use more. We are using the leftover Pesto for gluten-free pasta night later this week! *if you don’t have the nuts in your pantry already then this dinner will cost more than $10. Some great places to stock up on nuts for less are: Winco, Trader Joe’s and outlet food stores like Champion Foods or Grocery Outlet.

Pizza Ingredients: (modify and play around with the ingredients, pizzas are what you make it)

  • 2 tbsp Sun-dried tomatoes, sliced
  • 2 tbsp Pesto from recipe above
  • 1/4 cup sliced Black olives
  • Several slices of Mozzarella Cheese, plus a tbsp of shredded if desired (we like the log that we can slice into dollops, gives us more bang for our buck for leftovers)
  • Gluten-free pizza dough slices from Trader Joe’s (or you can use any pizza dough you want that sounds good to you)

Now to make this tasty, budget friendly no fuss pizza:

Put all the pesto ingredients into your food processor or Blendtec.  It looks funky but I tell you the smell and taste are amazing!

Kale Pesto

Green goodness in a jar!

Place your pizza crust on a baking sheet or pizza stone. Smear the pesto onto the dough and top with sundries tomatoes, black olives and dollops of Mozzarella cheese. Bake according to pizza dough instructions and your done! Serve and top with red pepper flakes if your so dare :)

We all loved this pesto so much, even my two year old was asking for more, she licked a heaping spoon clean!  Since she is a fan, and kale is so healthy for us all, I am already thinking of more I could do with this pesto! Pasta nights like gluten free penne or tortellini, veggie pesto lasagne, or a dollop of it over eggs int he morning… mmmmmm!

The husband liked the pizza so much that he wants it again next week!  I think i will surprise him with some prosciutto in place of the sun dried tomatoes and olives :)
