Mmmmmm, it is that time of year again…. turkey is roasting, cranberries have popped, stuffing is prepared and ohhh the pie!  And being married to a cute Canadian means our family has Thanksgiving TWICE :)

Canadian Thanksgiving was Sunday, October 12th this year and we had a very low key day: Seahawks football and dinner with all the fix in’s. A pretty perfect fall day.  We are still stuffed from all the yummy food, and already excited for American Thanksgiving in November, yummmm-o!  But with all this turkey twice a year, I need a few options for leftovers aside from the obvious turkey sandwiches.

My hubby whips up a pretty darn good turkey vegetable soup with lots of left overs and the carcas, however we save a lot of the meat for pot pies!  Who doesn’t love a good pot pie eh?  Pot pies, however, are pretty dense and caloric so I wanted a pot pie that was a bit healthier and not a total gut bomb (but still has to taste good right!)

Just a few simple ingredients!

 

Enter my Potted Turkey Pie!  It’s got veggies, a golden crust and stuffed with delicious leftover turkey!  *This recipe also works perfect with leftover roast chicken too.

Total cook time is 30 minutes and prep is a breeze!  Prepping dinner with 2 small children clamoring for my attention is my idea of an inner layer of hell, so any recipe that is quick and easy to throw together gets my 2 thumbs up!

Ingredients
  1. 1 can Cream of Chciken soup - fat free
  2. 1 pkg frozen mixed vegetables, thawed
  3. 1 cup cubed cooked turkey (can also use chicken)
  4. 1/2 cup skim milk
  5. 3 tbsp egg whites
  6. 2 tsp Italian seasoning
  7. 1 cup reduced fat Bisquick
Instructions
  1. Preheat Oven to 400 degrees
  2. Mix soup, vegetables, turkey and italian seasoning together
  3. Pout into a 9" pie pan
  4. Mix milk, eggs and Bisquick
  5. Pour milk mixture over chicken to coat
  6. Bake for 30 minutes until the crust is golden brown
Notes
  1. *left over roast chicken works great instead of turkey
  2. *add in some minced garlic for a little added punch
